Since 2023, UIC occupational therapy faculty have collaborated with Just Roots Chicago, a local farm and education center whose mission is to increase community access to healthy, sustainably grown foods. UI Health occupational therapy patients were given referrals to receive free fresh produce at Just Roots Chicago’s Saturday markets. Then, during late summer and early fall last year, patients and community members could avail themselves of fresh produce at Fresh Food Farmacy stands located in the UI Health Outpatient Care Clinic and outside of the College of Applied Health Sciences. This initiative is an innovative approach to helping people who struggle with diabetes or food insecurity by increasing their access to healthy, fresh foods.
